I LOVE fish on the grill, perhaps almost as much as meat...perhaps! Tonight I was in the mood for some meaty fish in a bun, with something to spice it up and freshen it up.
The cod was rubbed in a shop bought Sri Lankan style rub and grilled over the coals direct till it was nice and charred on the outside. The salmon (for my wife) was placed on a cedar plank that had been soaking in water for about an hour or so.
The fish only took about 20mins on the grill to cook off. In the meantime I made the Mango relish...which was basically to blitz in a food processor all the ingredients in the list below.
All that was left was to serve it in a bun, with some salad and the relish, and a few baby roast potatoes.
